Class Description: Mole is the traditional sauce of Oaxacan cuisine, and with so many varieties we will focus on a classic poblano mole with upwards of 20 ingredients.

This class will cover the following:

  • Avocado Salad with Honey Lime Vinaigrette
  • Mole Poblano Chicken with Avocado & Queso Fresco
  • Chile Relleno in Mole Sauce
  • Cilantro Lime Rice
